Each of our beers is an experiment; in fact we may only brew it once, depending on the outcome. Our recipes, no disrespect intended, shun the Reinheitsgebot.
We use, hops, wheat, barley, candi sugar, odd yeasts, spices, and other wonderful ingredients to combine for a fine-tasting beer; although "fine" is always subject to much discussion.
We do use pure well water, and all our spent grain feeds wild deer that frequent our property.
We do not sell beer.

An Homage
When the Rollins family farm burned down in rural Oklahoma, only a few things were saved. Some pictures of the 11 children, only one tattered shot of 'Sooner' Tom Rollins, a cloth bag of scorched Indian Head pennies, and a leather saddlebag full of beer recipes; which is rebellious as Grady county was "dry."
